ingredient notes
Find the full ingredient measurements and instructions in the recipe card below!
- Peanut butter: I used unsalted creamy peanut butter for this recipe. I don’t recommend salted because it does make these bars too salty.
- Nutter butter cookies: You can find these cookies in the cookie and snack aisle at any grocery store!
- Semi-sweet chocolate chips: Substitute semi-sweet chocolate chips for dark chocolate or milk chocolate.
- Butter: This recipe is best with unsalted butter. If you only have salted butter on hand, reduce the salt amount to 1/4 teaspoon.
recipe instructions
These are the step-by-step instructions for how to make homemade peanut butter bars! You only need one large bowl, a whisk, and a square 8×8 baking pan. You do not need a stand mixer for this recipe! Before you start, line the baking pan with parchment paper and preheat the oven to 350 F/180 C.
STEP ONE: Cream the butter and sugars. In a large mixing bowl, pour in the slightly cooled melted butter, granulated sugar, and light brown sugar. Whisk them together until combined.
STEP TWO: Mix in the wet ingredients. Mix in the egg and vanilla extract until well combined.
STEP THREE: Mix in the peanut butter. Add the peanut butter to the mixing bowl and whisk it into the dough.
STEP FOUR: Fold in the dry ingredients. Fold in the all-purpose flour, baking powder, salt, and chocolate chips. Mix until just combined, don’t over-mix it!
STEP FIVE: Bake the bars. Evenly spread the cookie dough into the prepared baking pan. Press the cookies into the top of the dough. Bake the bars for 25-27 minutes or until the edges are golden brown and wrinkled. Let the bars cool completely on a wire cooling rack until completely cool. Then use a sharp knife to cut them into 16 bars and enjoy!
expert baking tips
- Use a kitchen scale for the most accurate measurements!
- Baking times may vary: All ovens are different, and your bars may bake quicker or take longer than the indicated baking time. I recommend checking on them occasionally and looking for signs of doneness!
- Use room temperature ingredients. This will create a smooth and uniform batter than will bake evenly.
- Cool the butter before using. Once melted, the butter will likely be too hot. Let it cool until it’s warm to the touch, but not hot.
- Wait to cut them. I know it can be so hard to wait but the bars are much easier to cut when they are completely cool.
faq’s
Definitely! You can also substitute them for a different kind of chocolate chip like dark, milk, or white chocolate.
You could try Butterfinger cookies as they are the most similar.
You should always wait until the bars are completely cool before cutting into them. They will likely be too gooey and will fall apart if you cut them while they’re still warm!
I haven’t tested this recipe with crunchy peanut butter but would love to hear how they turn out!
storage & freezing
- Room temperature: These bars are best kept in an airtight container or ziplock bag for 3-4 days at room temperature.
- Freezer: Store the bars in an airtight container or freezer bag for up to one month in the freezer.
