Apricot Jasmine Macarons
jasmine green tea macarons with an apricot jam filling!
- 1 Basic macaron recipe (below)
- 1 tablespoon jasmine tea leaves added to the almond meal/powdered sugar mix about 2 tea packets
Apricot Jam
- 5 fresh apricots, cored and diced
- ¼ cup sugar
- 1 plain vanilla buttercream
Core and dice the apricots.
Add the apricots to a small pot and add the sugar.
Cook the apricots over medium heat for 15-20 minutes until the apricots are mushy and thick. Set aside to cool.
When the shells are cool, pipe a round the top of one half of the shell with the buttercream. Place a bit of the apricot jam in the center of the ring. Place the other half of the shell on top.
Allow to mature in the fridge overnight before enjoying for maximum texture and flavor!!
