Easy Individual Peach Cobblers

The easiest individual peach cobblers that can be made for one, two, three people or more! Made with fresh ripe peaches and a sweet and buttery pie crumble topping. Then topped with a big scoop of cold creamy vanilla ice cream that melts on the peach fresh from the oven. Baked on a sheet pan and ready in under 30 minutes, they are less labor intensive than regular cobbler and they make the best quick weeknight dessert.

Ingredients

  • 2 ripe peaches
  • vanilla ice cream, for topping

Cinnamon Oat Pie Crumble

  • 2 tablespoon melted buter
  • cup brown sugar
  • cup sugar
  • cup flour
  • cup oats or oat flour
  • ¼ teaspoon cinnamon

Instructions

Making the Pie Crumble

  • Combine all of the ingredients in a bowl and mix well. Set bowl aside.

Peaches

  • Boil a large pot of water. Prepare a large bowl with very cold ice water and place it next to the stove.
  • Take each peach and with pairing knife, score the bottom in the shape of an X.
  • When the water is boiling, add each peach and boil for 2 minutes exactly, then remove and immediately place in the bowl of ice water.
  • Remove the peaches from the water when they're chilled and gently peal back the skin to remove it.
  • To remove the pit, take a pairing knife and slice a small circle around the top and bottom of each peach. Use your finger to scrape out a bit of the top of each circle. Stick your finger through the top hole and press the pit through the bottom hole. Discard the pit.

Baking the Peach Cobblers

  • Preheat the oven to 350 degrees.
  • Line a baking sheet with parchment paper and place the peaches on top.
  • Take the pie crumb and place a mound of it on top of the peaches. Sprinkle the remaining crumb around the pan. Bake the peaches for 20 minutes or until the crumb is golden brown. Remove and serve immediately with a scoop of vanilla ice cream. Enjoy!
