Gluten Free Pumpkin Bread Recipe

A classic Fall favorite, moist and delicate pumpkin bread but make it gluten and dairy free! Loaded with sweet aromatic autumn spices like cinnamon, clove, nutmeg, spicy ginger and combined with sweet and flavorful pumpkin puree.

Equipment

  • large mixing bowl

  • 4x8 loaf pan
  • parchment paper

Ingredients

  • cup canned pumpkin puree
  • 1 ½ cup dark brown sugar
  • cup canola oil
  • 2 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ teaspoon cloves
  • 1 ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon nutmeg
  • 1 cup full-fat coconut milk
  • 2 ½ cup gluten free 1:1 flour Bob's Red Mill
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder

Brown Sugar Crumble Topping

  • ¼ cup gluten free 1:1 flour
  • ¼ cup dark brown sugar
  • ½ teaspoon cinnamon
  • 1-1 ½ tbsp canola oil

Instructions

  • Preheat the oven to 350. Line a loaf pan with parchment paper and set aside.
  • In a large bowl, combine the pumpkin puree, sugar, salt, cloves, cinnamon, ginger, nutmeg, vanilla, and oil and whisk to combine them well.
  • Add the coconut milk and mix to combine.
  • Sift in the flour, baking powder, and baking soda and whisk to combine. Stop mixing as soon as the flour is incorporated.
  • Pour the pumpkin loaf batter into the prepped loaf pan and set aside.
  • In a medium bowl, combine the flour, sugar, cinnamon and oil for the crumble topping. Mix with a spoon to combine. If the crumble is dry, add a bit more oil.
  • Top the pumpkin loaf batter with the crumble over the top.
  • Bake for 1 hour, or until a tooth pick inserted into the middle of the loaf comes out clean.
  • Let cool completely on a wire rack and then remove from the pan. Slice and enjoy!

  • Always spoon measure your flour when baking! This means using a spoon to fluff the flour first, then spoon it into your measuring cup. This will give the most accurate results when baking.

Expert Tips

  • Don't over mix the batter- Over mixing the batter will result in a gummy and dense bread instead of light and fluffy.
  • Don't over bake the loaf- You want to bake the loaf just until a tooth pick comes out clean. Over baking the loaf will result in a dry and crumbly texture.
