  • 1 cup unsalted butter, 2 sticks
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs room temperature
  • 2 tsp vanilla extract
  • 2 ½ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • cup chopped dark chocolate or dark chocolate chips
  • cup chopped pecans
  • extra chocolate and whole pecans for the top


How to Brown the Butter

  • In a light colored pan, add 2 sticks of unsalted butter. Turn the heat to medium high and allow the butter to melt.
  • As it gets hotter, the melted butter will start to spit and foam. Stay by it as it boils, to stir it occasional. Allow to cook for 8-9 minutes. The butter should be amber in color and smell super nutty.
  • The best way to make sure you can see when the butter is brown is by using a light colored pan, otherwise you could risk burning it.
  • Once the butter starts to smell super nutty and is amber in color, remove it from the heat and pour into a medium bowl to cool.

How to Make the Cookie Bars

  • In a large bowl, add 1 cup brown sugar and 1 cup white sugar and mix to combine. Add the cooled butter and mix to combine.
  • Add the 2 room temperature eggs and 2 tsp vanilla extract and mix to combine.
  • Finally, add 2 ½ cups flour, 1 tsp baking soda, ½ tsp salt, ⅔ cup dark chocolate chips and ⅔ chopped pecans.
  • Fold the dry ingredients into the wet with a rubber spatula.
  • Prepare a 9x6 baking dish with parchment paper and spray the paper with non stick spray.
  • Press the dough into the baking pan and top with extra chocolate chips and whole pecans. Bake at 350 for 20-25 minutes. The bars should look matte on top when done and slightly golden brown.
  • Place the dish on a wire rack to cool completely before cutting. Serve warm!
