Apricot Jasmine Macarons

jasmine green tea macarons with an apricot jam filling!

Ingredients

  • 1 Basic macaron recipe (below)
  • 1 tablespoon jasmine tea leaves added to the almond meal/powdered sugar mix about 2 tea packets

Apricot Jam

  • 5 fresh apricots, cored and diced
  • ¼ cup sugar
  • 1 plain vanilla buttercream

Instructions

  • Core and dice the apricots.
  • Add the apricots to a small pot and add the sugar.
  • Cook the apricots over medium heat for 15-20 minutes until the apricots are mushy and thick. Set aside to cool.
  • When the shells are cool, pipe a round the top of one half of the shell with the buttercream. Place a bit of the apricot jam in the center of the ring. Place the other half of the shell on top.
  • Allow to mature in the fridge overnight before enjoying for maximum texture and flavor!!
