Easy S'mores Brownies

These s'mores brownie bars are the best dessert mashup for the summer! Layered with a golden graham cracker crust, cookie batter, and brownie batter, and then topped with gooey marshmallows and dark chocolate!

For the Blondie Batter

  • ½ cup unsalted butter melted
  • ½ cup + 1 tbsp light brown sugar packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup + 2 tbsp all-purpose flour
  • ¼ teaspoon baking powder
  • ½ teaspoon salt

For the S'mores Toppings

  • 4 ½ sheets graham crackers
  • ½ cup mini marshmallows or large ones cut into quarters
  • ¼ cup chopped dark chocolate bar


Before you Start

  • Preheat the oven to 350 F/180 C and line a square 8x8 baking pan with parchment to line all four sides.

  • Lay the graham cracker sheets in the bottom of the pan. There will be some gaps near the sides of the pan which is okay!

Making the Blondie Batter

  • In a large bowl, whisk together the light brown sugar, granulated sugar, egg, egg yolk, and vanilla extract until fluffy, about 1 minute.
    ½ cup + 1 tablespoon light brown sugar, ¼ cup granulated sugar, 1 large egg, 1 large egg yolk, 1 teaspoon vanilla extract
  • Stream the melted butter into the bowl while whisking constantly until completely combined.

  • Fold the flour, baking powder and salt into the batter until just combined.
    1 cup + 2 tablespoon all-purpose flour, ¼ teaspoon baking powder, ½ teaspoon salt
  • Spread half of the cookie batter evenly into the baking pan with an offset spatula and set the other half aside.

Making the Brownie Batter

  • Melt the butter and chocolate chips together until smooth.
    4 tablespoon unsalted butter, ⅓ cup semi-sweet chocolate chips
  • In another medium bowl, whisk together the sugar, vanilla extract, and egg until fluffy, about 1 minute.
    ¼ cup + ⅛ cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract
  • Stream the melted butter and chocolate into the bowl, whisking constantly until completely combined.
  • Fold in the flour, cocoa powder, and salt until just combined.
    ¼ cup all-purpose flour, ¼ cup unsweetened dark cocoa powder, ¼ teaspoon salt
  • Pour it int the pan and spread it evenly with an offset spatula.
  • Spread the other half of the cookie batter on top of the brownie batter.
  • Bake them for 30-33 minutes or until a toothpick inserted into the center comes out with just the tip smeared in chocolate.
  • Take it out of the oven and top with the marshmallows and chopped chocolate. Return the pan to the oven for 2-3 minutes longer or until the marshmallows are starting to puff up and the chocolate is starting to melt.

  • Let the brownies cool completely, then use a sharp knife lightly greased with butter or nonstick spray to keep the marshmallow from sticking to it and enjoy!


PLEASE NOTE: I highly recommend using a kitchen scale to weigh your dry ingredients.
  • If you don't have a scale, use a spoon to fluff the flour first, then spoon it into your measuring cup.

  • Use a kitchen scale: Baking with a scale is faster, easier, and overall much more accurate than cup measurements.
  • Baking times may vary: All ovens are different, and your brownies may bake quicker or take longer than the indicated baking time. I recommend always checking on them occasionally and testing for doneness!
  • Don't overbake: These brownies are meant to be extra gooey like s'mores would be! The middle will be gooey but not raw when they are done baking.
  • Cut once cool: I know it's so hard to wait but they will literally fall apart if you cut them while they're warm! When you're ready, run a sharp knife under hot water and then grease it with nonstick spray, butter, or oil, to help cut through the marshmallows.
