Single Peach Cobblers

Made with fresh ripe peaches and a sweet and buttery pie crumble topping. Then topped with a big scoop of cold creamy vanilla ice cream that melts on the peach fresh from the oven.

First combine 2 tbsp melted butter, 1/8 cup brown sugar, 1/8 cup white sugar, 1/3 cup flour, 1/8 cup oat flour, and 1/4 tsp cinnamon

Combine them all together with a spoon and set the bowl aside.

Then take your ripe peaches and lightly cut an X on the bottom

Place the peaches in a pot of boiling water for 2 minutes then remove

Immediately place the peaches in a bowl of ice cold water

Then gently peel the skin off the cooled peaches

Place the peaches on a parchment lined baking tray and cover with the pie crumble  on top and the rest around the pan

Bake the peaches for 20 minutes at 350. Top with a scoop of ice cream and more of the pie crumble!
