Hot Chocolate Cookies

These hot chocolate macarons are the best treat to cozy up with and enjoy the holiday season! Made with a chocolate shell and a chocolate dipped marshmallow in the center!

Sift the almond meal, powdered sugar, and cocoa powder into a large bowl and set aside.

Mix the egg whites in a stand mixer until stiff peaks form, about 10 minutes.

Start gently folding the dry ingredients into the stiff egg whites and mixing until combined.

Scrape the batter against the sides of the bowl until you can draw a figure 8 in one continuous ribbon.

Pipe the shells onto a silicone lined baking tray and let them rest for 30 minutes until a skin forms

 Dip the cooled baked shells in melted chocolate and stick a marshmallow to the center. Let them chill for 10 minutes to secure the marshmallow.

Sandwich the marshmallow with the other shell and toast the marshmallow with a torch if desired!

Let them mature in the fridge overnight before enjoying! They taste just like a cup of cocoa!
