Grilled Green Chile Mac and Cheese Sandwiches

Perfectly toasted buttery thick sliced bread, filled with homemade macaroni and cheese, and shredded green Chile chicken. This grilled cheese sandwich is the ultimate comfort food!

First melt 1 tbsp of butter in a saute pan over medium heat

Then add 1 tbsp of flour and whisk to combine

Add 1 cup shredded cheddar cheese and 1/4 cup shredded Gruyere

Whisk to melt the cheeses and create the cheese sauce

Add 3/4 cup cooked elbow noodles and 1 can of diced green chiles

Add the shredded green Chile chicken and mix to combine

Slice up thick pieces of sour dough bread and spread butter onto each slice

Add one slice of toast to the pan and top with some of the Mac and cheese mixture

Toast 2-3 minutes on each side until golden brown
