Blueberry Macarons

These blueberry macarons have a blueberry ganache filling that's made with real berries! The amount of natural blueberry flavor these macarons have is out of this world!

Sift together 1 1/4 cup powdered sugar and 1 3/4 cup almond meal.

Fold the dry ingredients into 4 egg whites that have been mixed to stiff peaks.

Add blue and red food coloring to the batter to make it a pale purple color and mix to combine.

Pipe the round macaron shells onto a baking tray then let them sit at room temp for 30 minutes to dry.

Make the blueberry ganache by boiling 1/2 cup heavy cream and 1/2 cup fresh blueberries. Let cool.

Blend the cream and blueberries then bring to a boil again. Pour over 2/3 cup white chocolate and let sit for 2 minutes.

Stir to melt the chocolate then set the ganache aside to firm into a thick frosting consistency.

After the shells are baked, fill them with the blueberry ganache and enjoy!
