Easy Potato Bites

These potato bites are like the appetizer version of scalloped potatoes! With buttery layers of thinly sliced potato, gruyere cheese, and fresh chives, they're baked then pan fried until crispy.

In a large bowl, toss 2 lbs thinly sliced potatoes in 1/2 cup heavy cream until well coated.

Then add one layer of them to the bottom of an 8x8 baking dish lined with parchment paper.

Sprinkle a few tbsp of 1 1/3 cup gruyere cheese mixed with 1/4 cup chopped chives and dot it with 1/2 tbsp of butter.

Continue creating layers until all of the potato and cheese mixture are used, leaving the top plain with just potatoes and butter.

Bake the dish at 350 for 30-40 minutes until tender, then place weights on top until its cool.

Let it sit in the fridge over night, then trim the edges to form a straight square. Cut it into 1 inch square pieces.

Pan fry the pieces cut side down in hot oil until brown and crispy.
