Samoa Cookie Macarons

These Samoa macarons are filled with a chewy coconut caramel filling and drizzled with melted dark chocolate. They taste just like girl scout Samoa cookies!

Sift together 120 grams almond meal, 8 grams cocoa powder, and 138 g almond meal

Then mix 107 g egg whites with 110 g sugar until stiff peaks form

Mix in the dry ingredients and fold to combine them into the stiff meringue

Then pipe the shells onto a silpat mat and bake at 300F for 13-14 minutes.

Then make the caramel by boiling 1 cup sugar, 1/4 cup water and 1/4 tsp cream of tartar

Let it cool 10 minutes then add 1/2 cup shredded sweetened coconut.

Once completely cool, roll the caramel into balls, flatten them, and then place the patty in between two shells.

Drizzle with chocolate and enjoy!
