Earl Grey Tea Cake

This earl grey cake is filled with sweet and tart blueberry compote and covered in silky smooth vanilla buttercream.

In a mixing bowl, cream together ½ cup butter, 2 tbsp canola oil and ¾ cup sugar until very light and fluffy.

Add the earl grey infused milk and combine, then add the rest of the dry ingredients.

Evenly distribute the batter into three 6-inch cake pans and bake at 350F for 20 minutes.

While the cake cools, boil ½ cup water, 2 tbsp earl grey tea and ¼ cup sugar for simple syrup.

Make the compote by combining 1 cup blueberries, 2 tbsp sugar, 1 tsp corn starch and 2 tsp water until thick.

Then make the vanilla buttercream by combining 1 cup butter, 2 cups powdered sugar, 1 tbsp whole milk and 2 tsp vanilla extract.

Brush each cake layer with the syrup, add some frosting, then the compote and assemble the cake.
