Circus Animal Birthday Macarons

These birthday cake macarons are inspired by circus animal cookies and are filled with a sweet vanilla cake batter buttercream, covered in pink and white chocolate and confetti sprinkles.

Sift the almond meal and powdered sugar together in a large bowl.

Whip egg whites to stiff peaks then fold the dries into the meringue.

Pipe the shells onto a baking tray, rest for 30 minutes, then bake at 300 for 12-13 minutes.

Dip the shells in chocolate, cover in sprinkles, and fill with cake batter buttercream.
