Chewy Espresso Chocolate Chip Cookies

Sink your teeth into these irresistibly chewy espresso chocolate chip cookies! This easy recipe uses 9 ingredients and can be made in one bowl.  These cookies are made for coffee lovers!

Cream together 2/3 cup light brown sugar with 6 tbsp room temperature butter until fluffy and combined.

Mix in 2 large room temperature egg yolks and mix them into the butter and sugar until combined.

Add 1 tbsp brewed espresso, 2 tsp ground espresso, and 1 tsp vanilla extract and mix until well combined.

Mix in 1 cup flour, 1/2 tsp baking soda, 1/4 tsp salt, and 1/3 cup chocolate chips or chopped chocolate until combined.

Scoop the cookie dough with a large scoop and top with extra chocolate. Freeze for 15 minutes then bake at 350 for 12 minutes.
