First make the crumb topping. Combine the flour, light brown sugar, butter, and cinnamon until crumbs form.
Then whisk together the oil and brown sugar together until combined.
Whisk in the eggs, vanilla, grated apples, and apple juice until combined.
Finally whisk in the the flour, baking soda, cinnamon, and salt until just combined.
Pour the batter into a 8x8 baking pan and bake at 325 for 28 minutes. Drizzle with vanilla glaze and enjoy!
