Whisk together the oil, brown sugar, and vanilla until combined.
Whisk in the eggs, sour cream, and vanilla until combined.
Whisk in half of the dry ingredients until just combined. Then whisk in the apple cider. Finish by whisking in the rest of the dries.
Pour the batter into an 8x4 loaf pan lined with parchment paper. Bake at 350 F for 40-50 minutes.
Let the loaf cool then brush with melted butter and generously coat with cinnamon sugar. Enjoy!
